Healthy Hamburger & Potato Casserole

This easy beef casserole with potatoes makes the perfect weeknight dinner and is so delicious. Making healthy dinners that are filling and simple to make is a must for family dinners.

When our kids ask what we are having, we say, “food.” To be honest, oftentimes, we don’t even know what we are having myself. Do you ever start cooking dinner without even knowing what you are making? We do this all the time!

A couple of nights ago, our daughter wanted to help make dinner and before we even got into the kitchen, she had stuff going. We added to the “stuff,” and before we knew it, we had a delicious cheesy beef casserole with potatoes going in the oven.

Our family loved it and it was such a simple meal to make! Our husband requested that we add it to our normal weeknight dinner routine.

CHEAP DINNER IDEAS

We have a large family and feeding them healthy is important to me. With so many mouths to feed, we like to think of things that are healthy and inexpensive.

Casseroles with meat, potatoes, and vegetables typically fall into this category. We try to use potatoes, avocados, and other filling vegetables in our recipes to cut down on the amount of meat we eat.

We buy organic beef from a local farm and even though it is a little more pricy, it is worth it to me. We try to stretch it as far as we can with other healthy fillers.

We call that a win because usually, we need 2 pounds per meal. This hamburger potato casserole is no exception! We was able to make a 9 by 13 pan of this casserole using only one pound of meat and it was enough to fill up our family.

FAMILY DINNER IDEAS

This recipe is great for a large family or meal prepping. It also makes the perfect dish to bring to a friend or to your next family gathering.

Set out to defrost 24 hours before baking and then bake like normal. While you are already cooking and have the mess out, double the recipe and freeze one pan for later. Simply cover the pan in aluminum foil and stick it in the freezer.

We love meals that we can whip up with little dishes and effort. It is even better when our family loves it! Hamburger potato casserole with vegetables is the perfect meal for the family because it will be loved by all, even the kids, and it doesn’t require much work.

HAMBURGER CASSEROLE SUBSTITUTIONS

Sometimes we look at recipes just to get an idea and then substitute with what we have on hand in our kitchen. This is how we come up with some of our most delicious meals!

  • In this recipe, if you don’t have ground beef on hand, you can use ground turkey, chicken, or pork. Any meat will work and taste great!
  • If you don’t have butter, you can drizzle the potatoes with avocado oil or olive oil instead of dotting them with butter.
  • The shredded carrots can be left out or substituted for a different veggie. We love to shred vegetables to casserole dishes so no one can see them, and we can sneak in one more healthy ingredient. Shredded zucchini taste delicious in this recipe too!
  • You can use frozen or canned corn. If you don’t have corn, you can substitute this for peas.
  • If you are dairy-free, you can leave out the cheese.
  • Heavy whipping cream can be left out. However, it makes the casserole more moist and creamy. This can be substituted with half and half. For dairy-free, you can use canned coconut milk or beef broth.
